  • black cardamom (2)
  • black peppercorns (4-5)

  • star anise (1)

  • dry Kashmiri chillis (7-8)
  • cumin seeds (1sp)
  • ginger paste (1 tbsp)
  • garlic paste (1 tbsp)
  • Mutton mince (250 gms)
  • Lamb leg cut on cubes with the bone ( 500 gms)
  • onions thinly chopped (2)
  • tomatoes finely chopped (3-4)
  • thick curd (2-3 tbsp)
  • turmeric (½ tsp)
  • coriander powder (1 tsp)
  • salt
  • olive oil (3 tbsp)
  • garam masala (½ tsp)
  • Fresh coriander to garnish

How To Make Mutton Rara: To make mutton rara, take a pan that has a deep base and heat the pan. Pour olive oil in the pan and wait it starts to smoke. When it starts to smoke, then put all whole spices in the oil and fry them until you can smell the fragrance of the whole spices. In the spices, put the chopped onion and fry for one minute and then put the ginger-garlic in the onion and sautee them. After they soften well, then pour the minced meat in the pan. Fry them until the grains of the minced meat is separated.

Get some tomatoes and pour them in the meat. Fry the meat with the tomatoes. Take the 500 gms of lamb cut and put it in the pan and fry them in the tomatoes and minced meat. Cover the meat and cook it for 40 minutes in low flame. Check if the meat is cooking properly. If any water is needed, pour some boiled water. After the tender of meat, you can observe the oil is sorting out from the meat and gravy, take the curd and mix it well and pour it in the meat and stir it for some times, then put the garam masala in the meat and stir and as it thickens enough to turn the flame off.   • Mutton (1/2 kg)
  • Turmeric powder (1/4 tsp)
  • Red chilli powder (1/2 tsp)
  • Salt to taste
  • Oil (2 tsp)
  • Cumin (1/2 tsp)
  • Pepper (3/4 tsp)
  • Red chilli (5 to 6)
  • Coriander seeds (2 tsp)
  • Cinnamon (2)
  • Cloves (4)
  • Cardamom (2)
  • Star anise (1)
  • Cumin seeds – 1/2 tsp
  • Bay leaf – 1
  • Onion – 2
  • Ginger garlic paste – 1 tbsp
  • Tomato – 2
  • Saunf powder – 1/2 tsp
  • Curry & coriander leaves

To make the dish, then take the mutton and put turmeric, chilli powder, and salt and marinate for a minimum of 1 hour. Then add some water in it and put it all in a pressure cooker and whistle it until it is tender. And then set it aside and start on the masala preparation. Take a pan and heat it well. Pour the oil in the pan and wait until it starts to smoke. Put all the whole spices cardamom, star anise, cumin seeds, cinnamon, cloves, curry leaves, and pepper to it and fry it well. When the fragrance starts to come out, then turn the flame and grind the spices with some water into the fine smooth mixer. Take some more oil into the pan and heat it again and add some more cumin seeds in the pan and wait until it starts to splutter.

Put the sliced onion into the oil and cumin seeds and fry them in low flame until they are pinkish brown, then put the ginger garlic paste into the pan and fry till the raw smell goes away. Pour the tomatoes in it and fry all well. When the tomatoes are softened, pour the made smooth masala and fry it and then cover it for a few minutes until it is cooked.
